Simak Seputar Protein dalam Putih Telur

RSI BANJARNEGARA - Protein memainkan peran penting dalam pengembangan dan perbaikan tidak hanya otot kita, tetapi juga kulit, rambut, kuku, dan sistem kerangka kita. Sumber makanan protein yang paling umum adalah produk susu, unggas, daging, dan putih telur.

Ada dua jenis protein: lengkap dan tidak lengkap. Protein lengkap terdiri dari 20 asam amino esensial. Protein dengan 19 atau kurang dianggap tidak lengkap dan karenanya diberi nilai biologis yang lebih rendah.

Sembilan dari asam amino esensial ini tidak dapat diproduksi oleh tubuh manusia dan harus diambil melalui berbagai sumber makanan. Sumber makanan ini mungkin memiliki protein lengkap atau tidak lengkap.

Telur mengandung protein alami kelas atas, yang sebagian besar ditemukan dalam putih telur. Inilah sebabnya mengapa banyak binaragawan menganggapnya sebagai makanan pokok dalam diet mereka.

Lantas, apa yang membuat protein jenis ini begitu istimewa? Yah, pertama, ini adalah protein lengkap. Ini berarti ia mampu memasok tubuh kita dengan semua asam amino esensial yang dibutuhkannya.
Kedua, ia memiliki peringkat kecernaan yang sangat tinggi, yang berarti hampir semuanya diubah oleh tubuh kita menjadi asam amino yang dapat digunakan. Ketiga, dapat memasok protein tidak lengkap dengan asam amino esensial apa pun yang kurang sehingga mereka juga menjadi protein lengkap. Betapa kerennya itu?

Memakannya mentah dapat membuat kita terkena salmonella dan avidin (enzim yang mencegah tubuh kita menyerap vitamin biotin) jadi sebaiknya konsumsi putih telur yang sudah dimasak. Selain itu, memasak tidak mengurangi kandungan protein totalnya sehingga kita tetap mendapatkan semua manfaatnya tanpa risiko. (*)
